I'm wondering how people find the CELTA? I'm most interested in peoples opinions who are educated up to GCSE/A level or equivalent.
Would you say that it should be manageable for most who put the time and effort in?

You need to be educated up to A levels (not just GCSEs) to get on the course, and I think that is a good indication of the intellectual level of the course. If you want to test yourself, try learning the English phonemic script or learning how to identify English tenses. If you can do one of those, you'll have no problems with the theoretical side of the course.
