Hi Chris. I'm assuming that you're applying for adult education, rather than institutional jobs. That said, my advice is probably applicable to either.
Ridiculous though this may seem, you should probably start sounding out the larger more reputable language schools after the Easter break. (and go on to carpet bomb the entire yellow pages if there is no return on that after a month) This can be done quickly and cheaply via the internet (make sure you have a current pdf cv which you can add to any e-mail). The chances of your getting anything firm for 'la rentrée' are fairly slim, but this is definitely a sector where it pays to be on file. You can aim to follow up your e-mail with a 'phone call, or just another e-mail...
Whatever else you do, do NOT wait for the summer holidays. Assume that all administrative staff are away on holiday. I know that this may be a total exaggeration, but July or August is WAY too late.
