Taking holiday?

Just about to start applying for jobs - just wondered has anyone not been able to get holiday they wanted to take from their employers?

Don't quite understand.
You are joining a profession that serves students.
You could possibly take leave outside of the normal periods by organising a fellow teacher to cover. This is unlikely.
